Rosemary

Made with fresh wild Rosemary crushed with early harvest, fresh picked, certified organic olives using 100% mechanical cold extraction methods. This fused herb oil embodies the heart and soul of rosemary. It is both complex and aromatic. Use anywhere rosemary might be used. Perfect with poultry, pork or lamb. Spectacular drizzled over sautéed vegetables, mind-blowing with roasted potatoes.

Pairs well with: Sicilian Lemon White Balsamic, Oregano White Balsamic, and Pomegranate Dark Balsamic.

Mandarin

Made with fresh Mandarin citrus fruit picked at its peak and crushed with fresh, certified organic early harvest Chetoui olives using 100% mechanical cold extraction methods. This fused citrus oil is redolent with the intense, bright flavor of fresh Mandarin zest. Use it in baked goods such as tea cakes, in dressings, and marinades. It is particularly delicious with poultry.

Pairs well with: Serrano-Honey Vinegar, Cherry Dark Balsamic, Maple Dark Balsamic, Blueberry Dark Balsamic, and Key Lime White Balsamic.

Smoked Dried Chaabani

Dried red Chaabani peppers were dried in kilns that used olive wood and its smoke to dry them. The dried peppers were ground simultaneously with the olives to produce a very concentrated flavor. Crafted in a very small batch of 1000kg of olives and 40kg of smoked, dried red peppers, this mildly spicy oil is beautifully smoky and amazing on grilled prawns, grilled fish, drizzled on hummus, and as an overnight meat filet marinade.

Pairs well with: Pineapple Balsamic, Fig Balsamic and Lemongrass Mint Balsamic. The results are incredible!

Baklouti

From the Barbary Coast of North Africa, this Tunisian Baklouti pepper is rare and unique to this region. This fused oil is the only example of this fruity and spicy green chili olive oil in the world. Baklouti chili olive oil is made by combining fresh, early harvest organic olives with an almost equal ratio of fresh, whole green Baklouti chilies. The two, and only two, ingredients are then crushed together, mixed in the malaxer which fuses the fresh green essential oil of the pepper with the organic olive oil. Baklouti adds a savory, tantalizing kick to salsas, marinades, soups, grilled foods, vegetables and more. Caution: very hot!

Blood Orange

Made with fresh Blood Oranges and early harvest certified organic Tunisian olives, we crush the fresh produce together to make this beautiful agrumato - a combination of whole, fresh citrus fruits crushed with early harvest olives. Our Whole Fruit Blood Orange is exceedingly versatile; use it on fish, in deserts, baking, with seafood, chicken, pork, fruit, salads and so much more.

Lemon

Our Lemon Olive Oil is produced by pressing whole, fresh lemons together with early harvest, certified organic olives at the time of crush. Its light, refreshing flavor is just perfect to sauté shrimp or scallops or to drizzle on chicken or fish. Yet this versatile oil can also be used to bake sweets such as cookies, biscotti, cakes and in granola. It’s fabulous in marinades, dressings on salads, vegetables and more. Pairs well with: Blueberry Balsamic, Raspberry Balsamic, Jalapeno White Balsamic, Apricot Balsamic, Fig Balsamic and Pomegranate balsamic.
